围炉，是闽南地区对年夜饭的叫法。除夕夜，全家老小围坐桌前，除了蒸鱼、炒面、炸物外，桌上必有一道以骨汤吊底的清汤火锅，烫海鲜、丸子、青菜吃，不蘸任何料碟，这是没被油碟、麻酱、火锅底料入侵过的古早味。
